There’s a famous story about anarchist waiter Hippolyte Havel who worked at Polly’s Restaurant on MacDougal Street, who famously called the customers ‘Bourgeois Pigs.’ One day a customer asked him the boundaries of Greenwich Village. Hippolyte responded “Greenwich Village is a state of mind; it has no boundaries.”
